New Choices

Good morning all!  Many of you have read my blog from a few days ago about "Made to Crave" by Lysa Terkeurst.  Well, I finally finished the book and absolutely love it!  I love that I can decide how I'm going to eat/exercise/diet/lifestyle change.  That's not the purpose of the book.  The book really helps me realize that the priorities in my life are a bit out of whack!

With that said I've decided to follow a few new rules for myself.  (they're more like guidelines! :-) )  I am eating as natural food choices as I can.  As non-processed as possible.  For example, I wanted chicken and noodles the other night.  ( a common food choice in the winter around here)  While I usually choose the more expensive but "better for you" noodles the other night I decided if I want noodles, I'm going to make them from scratch.  So, I did.  Can I just say, anyone who hasn't had homemade noodles before...you are soooooooo missing out!  I figure if I take the time to cook things from scratch, (quite a feat with two kids under the age of 5 running around) I will appreciate the items more.  Savor them more.  Now, I know what you're thinking.  The flaw in all of this is....  "hey, I can make a made from scratch chocolate cake!!!"  Give me a BIT more credit than that.  I know and you know that, as much as I LOVE a good ole' chocolate cake now and again, that will be detrimental to my health.  Also to my sanity! 

Most of you that read this blog know my family.  You know that my husband and I are usually sedentary meat and potato people.  So, this will be a big challenge to change the way we eat around here.  Not so much for me and my son, but my poor husband and daughter don't know what they are in for!  :-)

Basic Noodle Recipe
2 Cups all -purpose flour
1/2 tsp salt
2 beaten eggs
1/3 cup water
1 tsp oil (I used olive oil)

Stir together flour and salt and make a well in the center.  In a small bowl, combine eggs, water, and oil.  Add egg mixture to flour mixture; stir to combine.
Sprinkle a clean surface with flour and knead dough until smooth and elastic. Roll out dough to desired thickness and cut to shapes you need. 
If you are cooking these right away they only take 1-2 minutes in boiling water or stock.  If you let them dry they will take 3-4 minutes prepared the same way.
